Grapes were hand-harvested and picked September 6th early in the morning to maintain freshness. Sugar levels were at 20.7 brix with a 3.37 ph. Grapes were foot tread for two hours and went direct to press afterward into a VC stainless steel tank where it kicked off on its native yeasts until it finished primary fermentation on September 19th. Racked off gross lees and put into neutral barrique to await malolactic conversion which started almost immediately. Wine rested on its fine lees and was racked once to maintain freshness right before bottling in late July. This wine is unfined, unfiltered and at less than 8 ppm of free sulphur.
