Hand harvesting of the grapes transpired in the early morning of September 11th at 20.1 brix and 3.36 ph.  Native fermentation took place over ten days.  Barrel fermented, split into two neutral barrique for primary fermentation. Almost sugar dry, wine was then racked off into one neutral barrel to await natural malolactic conversion. Resting on its fine lees, it was racked once to maintain freshness right before bottling in late July. This wine is unfined, unfiltered, and at less than 8 ppm of free sulphur.
